Cupcake Wonderland

I’ve stepped into cupcake wonderland!! And I never wanna leave!!! I made cupcakes for the first time and I don’t think I wanna make anything else again!!!




I’ve looked adoringly at cupcakes many a times, wondering when I’d make my first batch. I get excited just at the thought of them! Couldn’t wait to decorate these lil babies in a rainbow of colors and adorable sprinkles!! So this week I finally got around to making them. I knew I wanted chocolate (no surprises there!) with a blue colored frosting. I used a simple Devil’s Food Cupcake recipe from Cupcake Bakeshop but used a different frosting. I thought the blue frosting would be great with a hint of peppermint. I don’t know why I thought that making cupcakes would be a tedious thing, in fact they were really quick and I don’t think I took more than an hour. Or maybe I got so lost in my wonderland that I didn’t notice time flying by...





Devil’s Food Chocolate Cake


makes 24 cupcakes / 350 degree oven

2 cups flour

2 cups sugar

1/2 cup unsweetened cocoa powder

1-1/2 teaspoons baking soda

1-1/2 cups milk

1/2 cup butter

2 teaspoons vanilla

2 eggs



Preheat oven to 350 degrees.

1. Measure out everything but the eggs directly into your mixer bowl.

2. Mix on low speed just until incorporated.

3. Beat on high speed for 2 minutes.

4. Add eggs, beat on high speed again for 2 minutes.



Measure out into cupcake pan lined with cupcake papers. A 2″ ice cream scoop works great for this. Bake for about 15-20 minutes until a toothpick comes out clean. Let cool slightly in the pan then transfer to a rack to cool completely before frosting.

Peppermint Frosting
 
1 stick butter


4 cups confectioner’s sugar

~1/4 cup milk

A few drops peppermint extract

Blue food coloring

1. Cream butter and sugar together. Add milk to get the desired consistency.

2. Add extract and coloring. Done!

You cupcakes look lovely...chocolate with blue frosting is a beautiful color combination.

And yes, even I was surprised the first time I make cupcakes at how easy it is!

I looove anything mint. I haven't made any cupcakes with peppermint frosting, but I think i will definitely have to in the future!

hi! thank you so much! im not really sure which tip i used but i think it was a 10..
